SPINACH PIE 
FILLING:

2 lbs. spinach, blanched, squeezed dry then chopped up
1 lg. onion, diced fine
7 oz. pancetta (Italian bacon), diced fine

Saute onion and pancetta together until golden brown.

3 oz. prosciutto, diced fine
3/4 c. Parmesan cheese

Mix all of above together except prosciutto. Sprinkle prosciutto on top when putting in pie crust.

CRUST:

2 1/2 c. flour (all purpose)
2 oz. lard (3 tbsp.)
3/4 - 1 c. water

Mix together and put in 9" pie dish. Bake at 350 degrees for 1 hour.
