SPINACH CASSEROLE 
2 boxes chopped spinach
1/2 pkg. Lipton onion soup mix
1 pt. light sour cream
1/2 c. whole wheat bread crumbs
1/2 c. freshly grated Parmesan cheese

Defrost spinach overnight in refrigerator and squeeze water out. Mix in sour cream and onion soup mix. Melt 2 tablespoons butter and mix with bread crumbs and grated cheese. Place on top of casserole and bake at 350 degrees for 1/2 hour or until heated through. If the kids hate spinach, let them try this!
