DAD'S SUGARLESS APPLE PIE 
1 (12 oz.) can frozen apple juice concentrate
3 tbsp. quick cooking tapioca
1/8 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
About 5 lg. apples, peeled, cored, and sliced (about 1/2 inch thick) (6 to 7 c.)
2 tbsp. butter
9 inch pastry crust
1/2 c. chopped nuts (optional)

Defrost apple juice by removing both ends of can and pushing out frozen juice onto an 8 inch square baking dish. Cook, uncovered, until juice is thawed. Stir in tapioca, salt, cinnamon, and nutmeg. Allow to stand at least 10 minutes while preparing apples. Add butter and sliced apples to unbaked pie crust. Pour sauce over apples. Cover with top crust. Bake at 350 degrees for 30 to 40 minutes or until pie crust is brown and apples are done. Top with whipped cream or ice cream.
