CORNISH HENS ON ITALIAN RICE 
1 c. long grain rice
1 env. Italian salad dressing mix
2 1/2 c. boiling water
1 can cream of chicken soup
2 Cornish hens
Seasonings to taste

Brown rice by spreading in a 3-quart shallow baking dish and bake at 375 degrees for 15 minutes. Remove from oven. Combine salad dressing mix with boiling water and the chicken soup. Stir into rice. Cut hens in half lengthwise. Season. Put hens, cut side down, on top of rice mixture. Cover tightly with foil. Bake 1 hour, covered. Uncover and bake 30 minutes or more. Also good with chicken breasts instead of Cornish hens.
