STEAMED ZUCCHINI AND TOMATOES 
2 green onions, chopped, with stems
1 tbsp. olive oil
2 med. zucchini, sliced
2 med. tomatoes, thinly wedged
Bay leaf
2 cloves garlic, minced
Soy sauce
Salt and white pepper

Saute onions in a skillet in oil. Add the zucchini and saute for 5 minutes. Add tomatoes with a little water and the bay leaf. Cover. Steam until tomatoes are tender. Add garlic, a few dashes of soy sauce, salt and pepper. Remove bay leaf and serve.
