TOMATO-ZUCCHINI SOUP 
1 tbsp. olive oil
1/2 c. chopped onion (1 sm. onion)
1 med. zucchini, finely diced
1 lg. tomato, peeled, seeded and diced
1/4 tsp. crushed dried oregano
1 c. tomato juice
1 c. chicken broth
1 tbsp. tomato paste
1 tbsp. prepared salsa (optional)
1 tbsp. minced fresh basil

Heat olive oil in medium pan. Add onion and zucchini and saute over medium heat until onion is transparent, 5-10 minutes. Add tomato, oregano, tomato juice, chicken broth, and tomato paste. Simmer until vegetables are tender, 12-14 minutes. Stir in salsa along with basil.
