MINIATURE CHEESECAKE COOKIES 
2 (8 oz.) pkgs. cream cheese
3/4 c. sugar
2 eggs
1 tsp. vanilla
1 tbsp. lemon juice
1 box vanilla wafers
1 can cherry pie filling

Cream cheese should be room temperature. Add all but the last 2 ingredients in a large mixing bowl and beat on high for 5 minutes. Mixture will be runny.

Place vanilla wafers in paper baking cups and fill with 1 tablespoon of mixture. Bake 10-12 minutes at 350. When cool top with cherry pie filling. Makes 4 dozen.
