MOSTACCIOLI 
1 lb. Italian sausage
1 tsp. salt
1/2 tsp. pepper
1 (6 oz.) can tomato paste
1 bay leaf
Parmesan cheese
1/2 c. mushrooms
1/4 c. salad oil
1 chopped onion
1 (No. 2) can tomatoes or 1 (8 oz.) can tomato sauce
1/2 tbsp. basil

Fry sausage with onions and mushrooms in hot oil until brown. Add tomatoes or sauce, bay leaf and basil. Season to taste with salt and pepper. Simmer 1 hour. If sauce becomes too thick, add water. Add tomato paste and simmer another 15 minutes. Remove bay leaf and pour sauce over Mostaccioli noodles cooked until tender and top with cheese. Serves 5-6.
