CREAMY CHICKEN-BROCCOLI
CASSEROLE
 
2 tsp. butter
1/4 c. onion
1 tbsp. plus 1 1/2 tsp. all-purpose flour
1 c. skim milk
2 oz. shredded Cheddar cheese
Dash each of salt and pepper
6 oz. cooked, diced chicken
1 c. cooked chopped broccoli
3/4 c. cooked macaroni shells
1/4 c. chopped pimentos
1/2 oz. slivered almonds

Preheat oven to 375 degrees. In small saucepan heat butter until bubbly and hot; add onion and saute (do not burn). Add flour and stir quickly to combine. Remove from heat and gradually stir in milk; stir until blended. Return to heat and cook, stirring constantly until thickened.

Add cheese and cook over low heat, stir occasionally until sauce is thick and creamy, about 2 minutes. Remove from heat and stir in salt and pepper.

In 2 quart casserole combine remaining ingredients. Pour cheese sauce over chicken mixture and combine. Sprinkle with almonds and bake 30 minutes. Makes 2 servings. 4 protein, 1 bread, 1 1/2 vegetable, 1 fat, 1/2 milk, 45 optional.
