SURPRISE MUFFINS 
1 c. whole wheat flour
1/4 c. honey
2 tsp. baking powder
1/2 tsp. baking soda
1/3 c. butter
2 c. Crispy Graham Flakes
1 beaten egg
1 c. buttermilk

Stir together flour, honey, baking powder and baking soda until mixed well. With a fork, cut in butter with the above mixture until it resembles coarse crumbs. Stir in graham flakes.

In separate bowl, combine egg with buttermilk. Add all at once to dry ingredients stirring until moistened. Fill greased muffin pan 1/3 full. Add a teaspoonful of your favorite surprise. Add another 1/3 of muffin dough so the muffin cup is 2/3 full. Bake at 400 degrees for 18-20 minutes. Makes 8 or 9 muffins.

Favorite surprise can be such as preserves, jelly, chopped fruit chips, raisins or chopped nuts.
