LOW SUGAR BRAN MUFFINS 
1 1/4 c. flour
1 tbsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
2 1/2 c. Bran Flakes cereal
1 1/4 c. milk
1 egg
2 tbsp. vegetable oil
Pumpkin pie spice & cinnamon

Stir flour, baking powder, salt and sugar together and set aside. Mix Bran Flakes and milk together and stir to mix, let stand 2-4 minutes. Add egg and oil; beat well. Add flour mixture and stir until combined. Pour into muffin pan. Makes 12. Bake at 400 degrees for 30 minutes or until done.

(I have used a no sugar Bran Flake cereal and also have cut up apples or used mashed bananas, all were good and freeze well and can be microwaved from freezer.)

Since microwave ovens vary in power, you may need to adjust your cooking time.

Made these last night and they were very good. The only adjustments I made was to add a half tablespoon of oil and an additional tablespoon of sugar.
