OVEN APPLE PANCAKES 
4 eggs, well beaten
1 c. milk
1/4 tsp. salt
1 c. flour
1/2 c. sugar
1 tbsp. cinnamon
3 tart medium apples, peeled, cored, and cut in 1/4 inch wedges
4 tbsp. butter
Whipped cream (optional)

With whisk or beater, beat eggs, milk, salt and flour until smooth. Let the batter rest. Combine the sugar and cinnamon, and sprinkle over the apples; toss to mix. Generously butter two 9 inch pie pans, using about 2 Tbsp. for each pan. Divide apples evenly between the pans. Stir the batter and pour it over the apples, using 1 c. per pan.

Bake at 375°F 30-40 minutes, or until pancakes are fluffed, golden brown, and set. Serve hot in wedges topped with whipped cream.
