APPLE PECAN OVEN PANCAKE 
1 apple, peeled, cored and chopped
1/3 c. chopped pecans (optional)
1/2 c. sugar, divided
2 tsp. ground cinnamon, divided
3 tsp. pure vanilla extract, divided
2 c. all-purpose baking mix
1 c. milk
2 large eggs, beaten

Preheat oven to 350°F (325°F for glass pie pan). Combine apple, pecans, 2 tablespoons sugar and 1 teaspoon each cinnamon and vanilla in a small bowl; set aside. Stir baking mix, milk, eggs, remaining sugar, remaining teaspoon cinnamon and 2 teaspoons vanilla in a large bowl until blended. Gently stir apple mixture into batter. Pour batter into a greased 9 or 10-inch pie pan.

Bake 40 minutes, or until knife inserted in center comes out clean. Serve with syrup.
