ROSE'S "SAUSAGE PIE" 
1 lb. sausage, cooked & crumbled
1 lb. ricotta
1/8 lb. prosciutto or ham, diced
6 oz. mozzarella, diced
1/8 c. sugar
3 eggs
1 tsp. parsley
2 tbsp. Parmesan cheese
Double pie crust

Line pie pan with dough, prick with fork. Sprinkle flour. In large bowl combine ricotta, mozzarella and sugar. Add eggs to mixture one at a time. Beat well after each addition. Add sausage, prosciutto, parsley and Parmesan to cheese mixture. Blend well. Pour into pie pan. Cover with pastry. Flute edges. Cut slits in pie to allow steam to escape. Bake 15 minutes in 400 degree oven then lower to 325 degrees. Bake 40 minutes longer.
