FRENCH CHICKEN | |
1 chicken, cut up and brown chicken in oil 1 tbsp. olive oil or vegetable oil 1 onion, chopped 1 garlic clove, chopped 3 tbsp. flour 1 c. white cooking wine 1 c. chicken broth 2 tsp. tomato paste 2 ripe tomatoes, cut up 1/2 tsp. basil 1 bay leaf 1/4 tsp. salt and pepper 2 tbsp. parsley 1 c. mushrooms, sliced (fresh or canned, drained) Saute onion and garlic in oil until slightly brown. Stir in flour, wine, and broth. Add tomato paste, basil, bay leaf, salt, and pepper. Saute sliced mushrooms and tomatoes in separate skillet until brown. Top the first ingredients. Put in a large casserole and bake for 1 hour at 350 degrees. |
