CHICKEN SALAD ITALIAN 
3 c. diced cooked chicken
1 c. chopped celery
1 (11 oz.) can mandarin oranges, drained
1 (15 1/4 oz.) can pineapple chunks, drained
1/4 c. slivered almonds, toasted
1/2 c. commercial Italian dressing
Lettuce leaves

Combine first 6 ingredients; toss. Cover and chill. Serve on lettuce. Tip: Use canned chicken, or microwave 4 chicken breast halves in 1/4 cup water. Cover and microwave at high 9-10 minutes, turning once; drain. Bone and chop chicken.

Since microwave ovens vary in power, you may need to adjust your cooking time.
