1 pkg. lemon Jello
1/2 c. hot water
1 c. pineapple juice
15 lg. marshmallows (or 30 sm. ones)
1 c. cottage cheese
Walnuts, chopped (opt.)
1/2 pt. heavy cream, whipped
1 sm. can crushed pineapple, drained
Cherries, for garnish

Dissolve gelatin in the hot water. Add pineapple juice and marshmallows. Heat mixture until marshmallows melt (do not let boil). Let cool until it starts to set, then beat (use electric beater. Add crushed pineapple, cottage cheese and nuts. Fold in whipped cream and refrigerate to let set. Garnish with cherries.
