BLEU CHEESE - OLIVE BALL 
8 oz. pkg. cream cheese, softened
3 tbsp. butter, softened
1 tbsp. brandy
4 oz. pkg. bleu cheese, crumbled
1 tbsp. chives
1/2 c. finely chopped ripe olives
1 c. chopped pecans

Combine first 3 ingredients; beat at medium speed of electric mixer until smooth. Add bleu cheese and beat well. Stir in chives and olives. Mixture will be soft.

Shape mix into a ball and roll into pecans. Refrigerate several hours or overnight. Garnish with olives and parsley.

I made this cheese ball as an appetizer for Thanksgiving. I made it with the bleu cheese and it was wonderful, but I thought with the olives and the chives that some feta cheese might just set it off. I followed the recipe just the same but added feta instead of bleu cheese, and my family (kids and all) gobbled it right up!
