LEMON POUND CAKE 
2 c. sugar
1 c. butter
3 eggs
3 1/2 c. Softasilk cake flour
1/2 tsp. baking soda
1 c. buttermilk
12 tbsp. grated lemon peel
2 tbsp. lemon juice
Vanilla flavoring (optional)

Preheat oven to 350°F.

Beat sugar and butter in large bowl on medium speed or until light and fluffy. Beat in eggs 1 at a time; beat mixture until smooth and creamy. Add flour and baking soda into sugar mixture. Add buttermilk until well blended. Stir in lemon peel and lemon juice. Beat 1 minute.

Turn batter into a greased baking pan and bake until a toothpick inserted in center comes out clean (about 45-50 minutes).
