GERMAN POTATO SALAD | |
2 lb. potatoes, cooked and peeled About 1/2 to 3/4 thinly sliced cucumber 1 tbsp. snipped dill 5 tbsp. white vinegar 1/8 tsp. pepper 1/2 tsp. salt 1 bouillon cube 1/4 c. minced onion 1 tbsp. sugar 1/4 c. vegetable oil I cook the potatoes the night before and refrigerate. I can slice them better. Combine sliced potatoes, peeled and sliced cucumber and minced onion in a bowl. Dissolve bouillon cube in about 1/4 cup of boiling water. Combine oil, sugar, salt, pepper and vinegar. Add some water if vinegar is too strong for your taste. Add dissolved bouillon cube. Pour over potatoes, toss. Garnish with dill. Let stand at room temperature for about an hour so flavors can blend. Toss once more before serving. |
