MAPLE BRAN MUFFINS 
3/4 c. natural wheat bran
1/2 c. milk
1/2 c. maple syrup
1 egg, beaten
1/4 c. oil
1 1/4 c. whole wheat flour
3 tsp. baking powder
1/2 tsp. salt
1/3 c. chopped nuts

FROSTING:

1 tbsp. butter, melted
1 tbsp. maple syrup
1/2 c. confectionery sugar

Combine wheat bran, milk and syrup. Add egg and oil. Combine flour, baking powder, salt and nuts and add to bran mixture just until moistened. Bake at 400 degrees for 18 to 20 minutes. Frost.

Or omit natural wheat bran; use next 4 ingredients. Add 1 1/2 cups 100% bran cereal and let stand 5 minutes. Use 1/2 cup flour and 1/2 cup whole wheat flour, 3 teaspoons baking powder, 1/2 teaspoon salt, sifted and add just until combined. Bake and frost.
