RICE BRAN MUFFINS 
3 1/2 c. Rice Bran Options brand cereal
1 1/2 c. skim milk
2 egg whites or 1/3 c. cholesterol free egg product
2 tbsp. vegetable oil
1 1/2 c. unbleached flour
1/2 c. brown sugar, packed
1 tbsp. baking powder

Preheat oven to 400 degrees. Coat with non-stick cooking spray or paper lined 12 (2 1/2") muffin cups. In medium bowl combine cereal, milk, egg whites, and oil. Let stand 5 minutes.

In bowl combine flour, sugar, baking powder. Add cereal mixture to flour mixture all at once, stirring just until moistened. Divide evenly among muffin cups. Bake 20 to 25 minutes or until tester inserted in center comes out clean. Makes 12. Preparation Time: 15 minutes.

BLUEBERRY BRAN: Add 1 cup fresh or frozen blueberries to batter just before baking.

CINNAMON-PECAN: Add 1/2 cup chopped pecans and 1 teaspoon ground cinnamon to flour; top with additional pecans just before baking.
