MELON SOUP | |
1 lg. ripe cantaloupe 2 tbsp. fresh lime juice 1 c. pineapple banana orange juice 1-2 tsp. sugar (optional) Fresh mint Peel and seed the cantaloupe. Cut into chunks. Puree in blender or food processor. Add other ingredients. The fresh mint can be chopped and added to soup after blending is completed, or used in leaf form as garnish only. More lime juice and pineapple-orange-banana juice may be added, or less used, according to individual taste. Serves 6. |
