PECAN - CHEESE CRACKERS 
1 lb. sharp Cheddar cheese, grated
2 sticks butter, softened
2 tsp. cayenne pepper
3 c. flour
2 c. sm. pecan pieces

Cream butter and cheese. Add flour and pepper. Mix well. Add chopped pecans. Mix. Shape into rolls. Wrap each roll in wax paper. Refrigerate 1 hour. Cut into 1/4 inch slices. Place on cookie sheet. Bake in 350 degree oven for 15 to 20 minutes. Do not brown.
