STIR - FRIED RICE 
2 c. diced chicken or ham, cooked
1 c. favorite vegetables or frozen vegetables
2 1/2 oz. sliced mushrooms, drained
2 eggs, slightly beaten
2 green onions (with tops), chopped
4 c. long grain white rice, cooked and drained 1 day ahead
2 tbsp. vegetable oil
1 or 2 tbsp. soy sauce
Dash of white pepper

Prepare white rice preferably 1 day ahead. Cover tightly and refrigerate no more than 5 days. Heat frying pan, adding 1 tablespoon of vegetable oil and rotate pan side to side. Add eggs and cook until eggs are thickened but still moist. Remove eggs. Add 1 tablespoon of vegetable oil to pan and add vegetables and mushrooms; stir - fry for 1 minute. Add rice to vegetable and mushroom mixture and stir-fry for 1 minute. Stir in soy sauce and dash of white pepper. Add chicken or ham, egg and green onions; stir-fry for 30 seconds.
