GARDEN VEGETABLE STUFFING FOR
FISH
 
2 med. onions, chopped
1/4 c. butter
2 c. dry bread cubes
1 c. carrot, coarsely shredded
1 c. mushrooms (fresh), cut up
1/2 c. parsley (fresh)
1 1/2 tbsp. lemon juice
1 egg
1 clove garlic, minced

Cook onion in butter until tender. Lightly mix remaining ingredients; place on top fish fillets of your choice and cook as directed.
