CRANBERRY MUFFINS 
1 c. chopped, raw cranberries, washed
1/2 c. sugar
2 c. all purpose flour
3 tsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
1 egg
1 c. milk
1/4 c. melted shortening

Grease muffin tins. In a small bowl combine cranberries and 1/2 cup sugar. In a large bowl sift flour with baking powder, salt, and 2 tablespoons sugar. In a separate bowl beat egg, then beat in milk and melted shortening. Add all at once to dry ingredients and stir quickly until flour is just dampened, batter will be lumpy. Fold in cranberries with the last few strokes. These muffins are worth making 3 bowls dirty! Fill tins 2/3 full. Bake at 400 degrees for 20-25 minutes.
