APRICOT NUT LOAF 
3/4 c. dried apricots
Lukewarm water
1 orange (juice and rind)
1/2 c. raisins
Boiling water
2/3 c. sugar
2 tbsp. butter, melted
1 egg
2 c. flour
2 tsp. salt
1 tsp. baking soda
1/2 c. chopped walnuts
1 tsp. vanilla

Cover apricots with lukewarm water and let stand for 30 minutes; drain. Use vegetable peeler to remove thin outer peel from half the orange, then ream all juice from orange. Grind apricots, raisins and orange peel, or finely chop. Add enough boiling water to orange juice to make 1 cup and pour into bowl with ground fruit mix in sugar, butter and eggs. Stir together dry ingredients. Stir dry ingredients into apricot mixture until blended, add nuts and vanilla. Spoon into well greased 9 x 5 inch loaf pan. Bake at 350 degrees.
