CUSTARD PIE 
1 3/4 c. sugar
6 eggs
2 tbsp. flour
Pinch of salt
1 qt. milk
1 tsp. vanilla

Combine sugar, flour and salt. Add eggs and beat with an electric mixer. Add milk slowly and beat on low. Add vanilla and pour into an unbaked pie shell (enough filling for 2 pies). Sprinkle coconut on top. Place in 375 degree oven and turn back to 350 degrees. Bake until knife comes out clean. This filling may be baked as a pudding - simply pour in big bowl and bake.
