SWEET POTATO PIE 
3 eggs
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 tsp. ginger
1/2 c. packed brown sugar
2 tbsp. corn syrup (or maple or honey)
1 1/2 c. mashed sweet potato
1 c. applesauce
1/4 c. melted butter
1 (9-inch) unbaked pie crust

Beat eggs and seasonings thoroughly in a large bowl; mix in remaining ingredients. Pour filling into pie shell. Bake for 10 minutes at 450 degrees. Reduce heat to 350 degrees and bake an additional 40-50 minutes until knife inserted in center comes out clean.
