CARROT AND ZUCCHINI BARS 
1 1/2 c. flour
3/4 c. brown sugar
1 tsp. baking powder
1/2 tsp. ground ginger
1/4 tsp. baking soda
2 slightly beaten eggs
1 1/2 c. shredded carrot
1 med. zucchini, shredded (1 c.)
1/2 c. raisins
1/2 c. chopped walnuts
1/2 c. cooking oil
1/4 c. honey
1 tsp. vanilla
Sour Cream Frosting

In a large bowl combine flour, brown sugar, baking powder, ginger, and baking soda. In another large bowl stir together eggs, carrots, zucchini, raisins, walnuts, oil, honey, and vanilla. Add carrot mixture to flour mixture stirring just until combined.

Spread batter into an ungreased 13 x 9 x 2 inch baking pan. Bake at 350 degrees for about 25 minutes or until toothpick comes out clean. Cool on wire rack. Frost with Sour Cream Frosting. Cut into bars. Makes 36 bars.
