CARROT AND ZUCCHINI BARS 
1 1/2 c. flour
3/4 c. packed brown sugar
1 tsp. baking powder
1/2 tsp. ground ginger
1/4 tsp. baking soda
2 slightly beaten eggs
1 1/2 c. shredded carrot
1 med. zucchini, shredded (1 c.)
1/2 c. raisins
1/2 c. chopped nuts
1/2 c. oil
1/4 c. honey
1 tsp. vanilla

In a large mixing bowl combine flour, brown sugar, baking powder, ginger and baking soda.

In another large mixing bowl stir together eggs, carrot, zucchini, raisins, nuts, oil, honey and vanilla. Add carrot mixture to flour mixture, stirring just until combined. Spread batter in an ungreased 13x9 pan. Bake in a 350 oven about 25 minutes or until center comes clean. Cool on a wire rack. Frost with cream cheese frosting. Store covered in the refrigerator. Makes 36 bars.
