BAKED BARBECUED CHICKEN | |
5-6 lbs. chicken pieces, skinned (12 pieces) 2/3 c. lemon juice 1/3 c. soy sauce 1/4 c. oil 1/4 tsp. Worcestershire sauce 1/4 tsp. pepper 1 tbsp. garlic powder 1 c. corn flake crumbs Place chicken pieces in large plastic bowl with tight-fitting lid. Combine lemon juice, soy sauce, oil, Worcestershire, pepper, and garlic powder. Blend well and pour over chicken, turning to coat both sides. Cover bowl and refrigerate at least 3 hours. Gently shake bowl frequently so marinade covers all chicken pieces. Preheat oven to 350 degrees. Coat with large baking sheet with cooking spray. Drain chicken and roll in crumbs, arrange on cookie sheet. Bake uncovered for 50 to 60 minutes, turning chicken after first 30 minutes. Makes 8 servings. |
