CRISPY BAKED BARBECUE CHICKEN 
1/2 c. fine dry bread crumbs
1 tsp. brown sugar
1 tsp. chili powder
1/2 tsp. garlic powder or 1 tsp. garlic salt
1/4 tsp. dry mustard
1/4 tsp. celery seed
1/8 tsp. cayenne
1 1/2 to 3 lb. frying chicken, cut up
1/4 c. melted butter

Combine bread crumbs and seasonings. Brush each chicken piece with melted butter and roll in crumb mixture. Arrange chicken skin side up, or remove skin first, in a shallow baking pan. Sprinkle any remaining crumb mixture over chicken. Bake uncovered at 375 degrees for 50 minutes or until tender. Do not turn chicken over.

This chicken was delicious. I used boneless chicken breasts and they came out juicy in the middle and browned and crispy on the outside -- Yum! The only addition I made was to add a teaspoon of barbecue seasoning to give it even more barbecue flavor. It would be a great picnic dish as well -- very tasty served cold, too! Added to my "Keeper" file, and will surely be a regular on the menu!
