CRACKER JACKS | |
6 qts. popped popcorn 2 c. molasses or any kind of golden or brown syrup 2 c. sugar 1 tsp. baking soda 2 c. peanuts, roasted and chopped 2 tbsp. vinegar (not wine vinegar) Sort the popcorn and take out unpopped kernels. Place in a large roaster or baking pan. Boil sugar, molasses, and vinegar until it cracks when tested in cold water or reaches hard crack on thermometer. Remove from heat and add soda. Beat briskly and pour at once over popcorn and chopped peanuts; stir. The soda will make it foam, but work quickly and mix it with the popcorn before it hardens. For something extra, put it into sacks or plastic bags when it is cool and wrap a small prize in the bags. Nice for a birthday party or prepare ahead when you have to make a long car ride with the children. |
