FRESH CRANBERRY SALAD 
1 pkg. (12 oz.) fresh cranberries, washed and sorted
1 1/2 c. sugar (or 1 [16 oz.] can of whole cranberry sauce)
3 c. boiling water
3 pkg. (3 oz. ea.) orange gelatin dessert
2 cans (11 oz. ea.) mandarin oranges, drain and cut in small pieces
1 c. chopped nuts (walnuts or pecans)
1 can (8 oz.) crushed pineapple, undrained

(If you use fresh berries) grind cranberries in food grinder or food processor. Stir in sugar to blend. Set aside.

Dissolve gelatin dessert in water; cool until mixture begins to thicken. Add to cranberry mixture. Add oranges, nuts and pineapple. Stir well. Pour into lightly oiled 8 cup mold. Chill overnight. Unmold and serve on plate of crisp greens. Yield: 16 servings.
