FRESH APPLE MUFFINS | |
1 1/2 c. cake flour 1/2 c. milk 1 egg 1/3 c. sugar, granulated 2 tsp. baking powder 1/2 tsp. salt 1 tsp. cinnamon 1/2 c. melted butter 1/4 c. firmly packed brown sugar 1 c. peeled, finely chopped apples 1/3 c. chopped nuts Combine flour, granulated sugar, baking powder, 1/2 teaspoon cinnamon and salt in large bowl. Beat egg; add milk. Stir in apples with butter. Add all at once with flour mixture. Stir just until moist (batter will be very stiff). Fill muffin cups about 2/3 full. Combine nuts, brown sugar, and remaining cinnamon. Sprinkle over each muffin and bake at 375 degrees for 15-20 minutes. Remove immediately. Serve warm. |
