RHUBARB MUFFINS | |
1 1/4 c. brown sugar 1/2 c. oil 1 egg 1 c. buttermilk 2 tsp. vanilla 1 1/2 c. diced rhubarb 2 1/2 c. flour 1/2 tsp. salt 1 tsp. baking soda 1 tsp. baking powder 1/2 c. nutmeats TOPPING: 1/3 c. sugar 1 tsp. cinnamon 1 tbsp. melted butter Beat until creamy the brown sugar, oil and egg. Add the rest of the ingredients. Fill muffin tins about 2/3 full. Blend sugar, butter, and cinnamon and sprinkle on muffins. Bake at 375 degrees for 20-25 minutes. Makes 17-18 muffins. |
