CRACKER PIE 
3 egg whites (or 3/8 c.)
1 tsp. baking powder
1 tsp. almond flavor
1 c. pecans, cut
1/2 c. crushed saltine cracker crumbs
1 c. sugar

Beat egg whites until they stand in peaks. Then add the baking powder. Next add the sugar in 4 portions. Add in almond extract. Fold in the cracker crumbs and then fold in the nuts.

Bake in a 9" buttered (1 teaspoon melted butter) pie pan. (If the eggs are large, use a 10" pie pan.) Bake 25 minutes in a 300 degree oven. Turn off heat and open oven door a crack until cool. Serve with ice cream and or strawberries.
