GEOFF'S ENCHILADAS 
1 1/2 lbs. ground beef
1 sm. onion
1 sm. tomato
4 tbsp. ketchup
1 can milk enchilada sauce
American cheese slices, cut into sm. slices
2 pkgs. corn tortillas
4 tbsp. Mole Poblano

Brown meat, onion, and tomato together. Add ketchup and Poblano. Heat enchilada sauce with 1/2 can water on medium heat. Soften tortilla in sauce. Fill with spoon of meat mixture and small slice of cheese. Roll tortilla up and place in pan. When all enchiladas are made, pour any remaining enchilada sauce on top. Add small slices of cheese to top. Cover with foil. Bake in 375 degree oven until cheese melts.
