CREAM OF BROCCOLI SOUP 
1 stick butter
1/2 c. finely chopped onion
4 tbsp. flour
2 c. chicken broth
2 c. milk
3/4 tsp. salt
Dash of pepper
1 (10 oz.) bag frozen chopped broccoli, thawed and cooked, or fresh broccoli, cooked

In a large pan, heat butter and onion for 3 minutes on medium heat. Blend in flour. Gradually add broth, milk, salt and pepper stirring until smooth and thickened. Add broccoli and puree in a food processor or blender. Return to pan and simmer for 7 minutes. Soup could be made thinner by adding more water or milk, or thicker by adding more flour in butter and onions. Serves 4 to 6 (depending on size of servings).
