GRANDMA GATES DATE FILLED
COOKIES
 
3/4 brown sugar
1/2 c. molasses
3/4 c. melted shortening
1/2 tsp. salt
1/3 c. boiling water
1 tsp. baking soda
2 tsp. vanilla
3 1/2 c. flour

Mix sugar and molasses. Add shortening and salt. Dissolve soda in boiling water and add to sugar mixture. Blend in vanilla; mix in flour. Cover and refrigerate 20-30 minutes.

Roll dough thin and cut with cookie cutter. Bake on greased tin 8-10 minutes at 400 degrees. Watch carefully.

DATE FILLING:

1 c. sugar
1/2 tsp. salt
1 pkg. dates (1 1/2 c.), cut fine
1 tsp. flour
1/2 c. water

Make date filling by combining sugar, salt, dates, flour and water. Put cookies together with date filling while warm.
