SWEET AND SOUR PORK 
1 lb. boneless pork, cut into 1 inch cubes
1 tbsp. corn oil
1 (15 oz.) pineapple chunks, drained (save liquid)
1/2 c. dark corn syrup
1/4 c. vinegar
2 tbsp. ketchup
2 tbsp. soy sauce
1 clove garlic, minced
2 tbsp. cornstarch
2 tbsp. pineapple liquid
1/2 c. green pepper pieces
1/2 c. raw, thinly sliced carrots

Brown pork in oil over medium heat. Add next 6 ingredients. Bring to a boil. Simmer 10 minutes or until done. Blend cornstarch and pineapple liquid until smooth. Add to pork with green peppers and cook until thickened. Add carrots. Boil for 2 minutes. Serve over cooked rice. Serves 4.
