STEAMBOAT OMELET 
12-16 pieces of bread
1/4 c. sliced onion
1/4 c. green pepper
1 c. sliced mushrooms
Sliced ham or Canadian bacon (enough to cover pan)
1 lb. cubed Velveeta cheese
8 eggs
1/2 tsp. salt
1/2 tsp. dry mustard
1/2 tsp. pepper
2 tsp. Worcestershire sauce
2 1/2 c. milk
1 stick butter

Grease a 9x13 inch pan. Place 6-8 pieces of bread in pan. Add the onion, green pepper, mushrooms, ham or Canadian bacon and Velveeta. Place 6-8 pieces of bread on top of this. Beat the eggs and add the salt, mustard, pepper, Worcestershire sauce and milk. Pour this over the bread. Place in refrigerator overnight. Melt 1 stick of butter and pour over casserole. Cover lightly with crushed potato chips, if desired. Bake at 350 degrees for 1 hour.
