BEEF CARROT CASSEROLE 
1 lb. ground beef
1 tbsp. butter
1/4 c. minced onion
1 clove garlic, minced
2 (8 oz.) cans tomato sauce
1 tsp. salt
1/4 tsp. pepper
1 c. sour cream
1 c. cream-style cottage cheese
1/4 c. chopped fresh parsley
1 c. sliced cooked carrots
8 oz. med. noodles, cooked and drained
1 c. shredded Cheddar cheese

Brown beef in melted butter in skillet. When meat begins to turn color, add onion and garlic. Saute until meat is well browned. Stir in tomato sauce, salt and pepper. Simmer uncovered 5 minutes.

Combine sour cream, cottage cheese, parsley and carrots. Add to cooked noodles and mix well.

Alternate layers of the meat mixture and cottage cheese mixture in greased 3 quart casserole, beginning and ending with noodles. Top with Cheddar cheese. Bake in 350 degree oven for 30 minutes or until hot.
