BEEF-CARROT CASSEROLE 
2 lbs. ground beef
1 tbsp. oil
1/2 c. chopped onion
1/2 c. chopped green pepper
1 clove garlic, minced
16 oz. can tomato sauce
1/4 c. water
1 tsp. salt
1/2 tsp. sugar
1/4 tsp. pepper
1 c. cream style cottage cheese
1 c. sour cream
1/4 c. chopped parsley
1 c. diced carrots
8 oz. med. noodles, cooked & drained
1 c. shredded sharp cheddar cheese

Brown beef in oil. When beef begins to turn color add onions and garlic. Saute until meat is brown. Add peppers, tomato sauce, water, salt, pepper and sugar. Cover and simmer 30 minutes. Combine sour cream, cottage cheese, parsley and carrots. Add to cooked noodles; mix well. Alternate layers of meat mixture and noodle mixture in greased 3 quart casserole. Begin and end with noodles. Top with cheddar cheese. Bake on 350 degrees for 30 minutes.
