CHEESE-STUFFED CHICKEN BREASTS 
4 boned, skinless chicken breast halves
4 slices Mozzarella cheese
1 egg white

FLOUR MIXTURE:

2 tbsp. all-purpose flour
1 tbsp. Parmesan cheese
1 tsp. parsley
Pepper

Cooking spray

Cut a pocket in meaty part of chicken breasts. Insert cheese slice.

Dip chicken in beaten egg white. Then, coat with flour mixture. Spray a 10x6x2 baking dish. Arrange chicken in pan and bake at 375 degrees F. for 20-25 minutes.
