POTATO ROLLS 
1 pkg. yeast
1/2 c. warm water
2/3 c. shortening
1 tsp. salt
1/2 c. sugar
1 c. mashed potatoes
1 c. scalded milk
2 eggs
6 to 8 c. flour

Dissolve yeast in warm water. Pour scalded milk over shortening, salt, and sugar. Add potatoes and well beaten eggs. Add dissolved yeast and flour. Let rise until doubled in size. Mash down and put in refrigerator. Make desired shape of rolls; let rise 1 1/2 hours. Bake 10 to 15 minutes at 400 degrees.
