EGGPLANT CASSEROLE 
1 lg. eggplant
1/2 lb. cheese
1 can tomato sauce (2 if necessary)
1 1/2 lbs. ground beef
1 lg. onion
1/2 c. chopped celery
Season to taste

Wash and slice eggplant. Cover with water and boil 30 minutes or until tender. Prepare sauce while eggplant cooks. Brown ground beef, onion, and celery. Add tomato sauce. Drain eggplant of all water; mash with masher. Layer in casserole dish with sauce and cheese or mix sauce and eggplant and put cheese on top. Bake at 350 degrees for 20 minutes.
