POOR MAN'S CAKE | |
1 box raisins 3 c. water 1 c. Crisco 2 c. sugar 2 eggs 1 tsp. cinnamon 1 tsp. cloves 1 tsp. nutmeg 1 tsp. allspice 2 tsp. baking soda 4 1/2 c. flour 1 c. chopped nuts Simmer 1 box raisins in 2 cups of water and 1 cup Crisco for 15 minutes. Let cool. Then add 1 cup cold water. In large bowl cream 2 cups sugar and 2 eggs. Sift 1 teaspoon cinnamon, 1 teaspoon cloves, 1 teaspoon nutmeg, 1 teaspoon allspice, 2 teaspoons baking soda and 4 1/2 cups flour. Add raisin mixture and chopped nuts. Bake in greased tube pan at 350 degrees for 1 hour and 15 minutes. Cool on rack 10-15 minutes. Invert onto dish. |
